🥗 KISIR Recipe from Turkish Cuisine
Ingredients Needed for KISIR
2 cups fine bulgur (kısırlık bulgur)
1 cup hot water (should be half the amount of bulgur used)
1 tea glass of oil (approx. 1/2 cup or 100 ml)
1 tablespoon tomato paste
1 tablespoon pepper paste
1 bunch of parsley
5 spring onions (scallions)
7-8 pickled gherkins (small pickles)
Juice of 1 lemon
1 teaspoon salt
Half a teaspoon black pepper
Instructions for Making KISIR
First, place the fine bulgur in a deep bowl and pour the hot water over it, mixing briefly.
Cover the bowl and set it aside to allow the bulgur to swell. Waiting for about 20-30 minutes will be sufficient.
Finely chop the parsley, spring onions, and pickled gherkins and set them aside.
Heat the oil in a pan, add the tomato and pepper pastes, and sauté them well.
Take the well-softened bulgur and place it in a deep mixing bowl.
The recipe mentions sautéing onions and paste in a pan, but the ingredients list does not include an onion. Assuming the previous step (4) is the intended sautéing step: Add the sautéed paste (and oil mixture) from the pan to the wet bulgur.
Add the black pepper and salt, and knead the mixture well.
After the sauce and bulgur are thoroughly mixed, add the lemon juice.
Mix well, then add the chopped greens (parsley, spring onions) and the gherkins. Give it a final good mix, and your Kısır is ready!
We recommend consuming it with fresh greens, pickles, and Ayran (a traditional Turkish yogurt drink).
