Goralı sandwich is a legendary Istanbul delicacy, considered one of the earliest examples of Turkish fast-food culture. It features sausages cooked in a special tomato paste sauce combined with Russian salad (Olivier salad) inside a sandwich bun. The sandwich is named after the Goralı family, who discovered this recipe in the Fatih district of Istanbul in 1945 and whose roots trace back to the Gora region of the former Yugoslavia.
- 🌭 4 long sausages (frankenstein or hot dog style)
- 🥖 4 sandwich buns
- 🧈 1 tablespoon butter
- 🥫 1 tablespoon tomato paste
- 🧄 2 cloves garlic (minced)
- 💧 1 cup hot water
- 🌶️ 1 teaspoon black pepper
- 🧂 1 teaspoon salt
- 🥗 4 tablespoons Russian salad (Olivier salad)
- 🥒 4-5 gherkin pickles (sliced lengthwise)
- Prepare the Sauce: Melt butter in a large skillet. Add
minced garlic and sauté for 1 minute until fragrant. Stir in the tomato
paste and cook for another minute. Pour in the hot water, salt, and
black pepper. Bring to a simmer. 🥣
- Cook the Sausages: Make shallow
diagonal cuts on the sausages. Place them into the simmering tomato
sauce. Cook over low heat for 10-12 minutes until the sausages absorb
the sauce and plump up. 🔥
- Prep the Buns: Slice the sandwich buns open.
Lightly press the inside of the buns into the warm tomato sauce in the
skillet to absorb the flavor. 🥖
- Assemble: Spread a generous spoonful of Russian salad on the bottom half of each bun. Layer with sliced gherkins. Place a hot sauce-infused sausage on top. Serve immediately while warm. 🍽️
